According to recent public records, an original–but deeply traditional–new concept is coming to Round Rock. Hidalgo’s Bar & Grill, named after the Mexican state, will soon begin construction at 1827 N Mays Street.
“The specialty of the restaurant will be barbacoa from the state of Hidalgo, which is the original style of barbacoa,” owner Ladislao Solis tells What Now Austin.
“We will be bringing this concept to town for this first time, but it’s not a new concept by any means.”
“This type of barbacoa, the original style in Mexican cuisine, typically centers goat and lamb cooked in a pit below ground,” he explains with great pride in the culinary style. “We will also serve a wide variety of dishes cooked on grills. Nothing will be fried.”
The restaurant, Mr. Solis’s first proper restaurant concept in the state of Texas, did not come easy as the installment of pits is not part of a typical construction project, making permits difficult to secure.
“This spot was already a bar and restaurant so it was easier to renovate the space to accommodate for our space,” Solis says. “And Round Rock in particular was generous enough to approve the construction of the pits.” No opening time frame is currently available, though estimates on records examined by What Now Austin point to the end of the year.
