Beloved by plant-based diners all around the valley (and famously featured on Guy Fieri’s Diners, Drive-Ins, and Dives), vegan deli NoButcher announced back in December that ownership has changed hands.
“Hi, Las Vegas vegan community! I’m Phillip Shia, the new owner of NoButcher,” read an Instagram post published by the brand on December 22, 2024. “NoButcher has become a cornerstone for plant-based living in Vegas, and I’m honored to continue its legacy. My goal is to create a space where everyone feels welcome, inspired, and excited about great food all while keeping the exceptional quality of food and service that NoButcher is known for.”
Shia is now continuing this work and the taking the brand to the next level, with a new location planned for Henderson. It’s opening at 2560 St. Rose Parkway, and hiring has already started.
“It’s much bigger—twice as big,” Shia told What Now on Friday. “It will have both indoor and outdoor seating; and right now I have a local artist designing a big mural for the space.”
There, you’ll be able to choose from the same great sandwiches, salads, sweets and more. There’s the Flakey NoChicken Sandwich (Cornflakes breaded, fried NoChicken filet on creamy orange slaw, with chipotle aioli and pickles on a crispy ciabatta roll), the Aloha NoRib Sandwich (NoRibs with bbq-teriyaki sauce, slaw, tomatoes, cucumber, red onion, and pineapple on a crispy ciabatta roll), the Mediterranean Roasted Veggies Sandwich, and more.
Shia also hinted that some of NoButcher’s periodic limited-time-only sandwiches may be getting permanent status. (An online poll may be involved: stay tuned.)
