The Coronado PHX, a vegan eatery, coffee shop, and bar co-owned and operated by Elle Murtagh, Emily Spetrino, Liz Tavarez and Juan Tavarez, has been serving plant-forward food in Phoenix for the last six years out of the little house on N 7th street. Now, the eatery is moving, and with that move comes an expanded space and an expanded menu.

Chef Elle Murtagh told What Now Phoenix, “for six years we’ve been making it work in a bedroom, essentially, but in this space the kitchen and work flow will be so much nicer.” She’s excited to expand the eatery’s production and efficiency in the new space. The move also offers the owners a little more control over the eatery’s ambiance. “[The new location] is modern and elegant and a really great space. Liz, our partner, is the interior designer and she’s done a wonderful job,” Murtagh added.

You can expect about twice the seating capacity, both indoor and outdoor, at The Coronado’s new location as well as an expanded menu. “With the pandemic we definitely pulled back a bit…and we’ve always been from scratch and plant-based,” Murtagh says. The new location will give The Coronado the chance to bring more vegetable-forward items to the current menu.

The Coronado’s current location will close permanently on the 20th of June. The new spot, on N 12th street, will open in early July. Follow the eatery’s social media for updates.
