As if the summer 2021 opening of Tremont Collective, a warehouse in the heart of coastal Oceanside that’s been converted to a mixed-use development with retail, fitness, and dining and drinking establishments, isn’t exciting enough, now you have Shootz to look forward to.
Shootz, a craft beer and poke concept, has been a long time in the works. According to San Diego Beer News, the creative team behind the restaurant, Chris Slowey, Cheyne Magnuson, Mike Weeks, and Davin Waite, has been workshopping the concept for years. Now, all members of the creative team are back in Oceanside and ready to launch their restaurant.
Shootz will consist of a kitchen with exterior walk-up window inside Tremont Collective’s Bottlecraft, the San Diego-based bottle shop that’s adding a new location in Oceanside. Speaking with What Now San Diego, Chef Waite said, “It will embody the same playful approach, and focus on total utilization as Wrench and Rodent [Waite’s avante garde sushi spot], while being streamlined and quick-casual.” Waite says they’re hoping for a late summer, early fall opening.
The brick-and-mortar will serve up poke bowls, sandwiches, gourmet corn dogs, and of course, Shootz beer. “There will be a few new items like, ahi corn dogs, and a few of the old favorites… we’re focusing on a celebration of the Pacific,” Waite added.
The brews were developed specifically to pair with the menu’s flavor profiles and will be contract-brewed by a local brewery. A recent post on Shootz’ Instagram gives a sense of what we can expect: “Japanese lager, heavy-hitting DIPA, and more…” They’ll even have a non-alcoholic beer. Cheers to that.
