It’s safe to say, with six locations throughout the region, that Bird Rock Coffee Roasters has become a San Diego staple. And thank goodness they are the gift that keeps on giving (or should I say the coffee that keeps on pouring??).
Only a couple of months ago, What Now San Diego covered the roastery’s expansion into Little Italy, and now, our intel suggests Bird Rock Coffee Roasters recently filed a permit application for 2445 Truxton Road in San Diego. It sounds like co-owner Jeff Taylor will have his Liberty Station location after all.
With Bird Rock, “it all comes down to the coffee.” The roastery sources coffee by establishing collaborative relationships with the farmers who grow their coffee, and they always pay “at least 50-100% above the Fair Trade contract price.” Why does this matter? Bird Rock believes this promotes “a long-term mutually beneficial [and] sustainable relationship.” That means consistency of flavor and quality for you, fair treatment of farmers for their labor, and sustainability for our planet. Sounds like the best kind of relationship to me.
Bird Rock Coffee Roaster’s Liberty Station coffee shop will be located in a bustling neighborhood along Truxtun Rd between Roosevelt and Womble Roads, and will provide the company 1,200 square feet to work with.
We were unable to reach Taylor at the time of publication, so you’ll want to follow Bird Rock’s social media for updates on their opening timeline.
