When you think of a chef-driven restaurant, you probably think of a hip bistro serving modern takes on classic dishes. The last thing that probably pops into your head is a diner, but the success of the elevated chef-driven format has opened the door for all kinds of possibilities, including Gather, the new chef-driven diner set to open in Downtown Lafayette.
Chef Paul Gibson and his wife Bonnie Gibson are opening Gather at 406 Garfield St., which is close to the Children’s Museum of Acadiana, Lafayette Science Museum, and the sites of various festivals held throughout the year. Slated to launch in mid-to-late December, Gather will be a breakfast, lunch and brunch spot open from 8 a.m. to 2 p.m., Tuesday to Saturday.
For the menus, Paul Gibson is bringing his culinary and life experiences to bear. For example, a burger with mango-jalapeno glazed bacon comes from his former restaurant Bonnie Bell’s Bistro, while the Korean street toast with Spam comes from Gibson’s time spent stationed in South Korea while in the Army. A full bar will serve brunch-friendly cocktails, as well as beer and wine.
