Top Chef Richard Blais coming to Grand Cypress

The restaurant's name is under wraps but it will replace Hemingway's.

Orlando’s Hyatt Regency Grand Cypress is being as secretive about its new restaurant as neighboring Disney World is about how it chooses its princesses.

One thing for sure though, is that the chef will be Richard Blais, the winner of Bravo’s “Top Chef All-Stars” who graduated from the Culinary Institute of America and trained at the famous Napa Valley restaurant, The French Laundry, according to Kingdom Insider, an unofficial Disney news source.

The new, yet-to-be-named restaurant will open later this year in the former Hemingway’s venue and will have a “tropical concept,” according to the Orlando Sentinel.

“It’s undeniable how talented and invigorating Chef Blais is. We couldn’t be more excited to be working with him for our newest restaurant,” Hyatt Regency Grand Cypress General Manager Paul Joseph said on the resort’s Facebook page. “This concept is something very near and dear to our hearts and to Blais’s and we can’t wait to be able to unveil it to our guests.”

“I love having fun with my concepts and menus and I’m so excited about what we’ve got in store for this restaurant at the Hyatt Regency Grand Cypress,” Chef Blais said in the Facebook release. “We’re looking forward to adding a memorable and innovative offering to Orlando’s already incredible food scene.”

It will serve dinner nightly and a Sunday brunch, according to Kingdom Insider.
