Impasta Expanding to Second Location in Santa Monica Late 2022

The restaurant is quickly expanding after starting as a delivery-only service in 2020

Impasta, the creators of “no regretti spaghetti,” is expanding to a second location in Santa Monica, located at 413 Santa Monica Blvd.

The elevated fast-casual restaurant will move into the former home of The Refinery coffee shop sometime in the second half of 2022, according to owner Harrison Litvack. He tells What Now Los Angeles the newest location will be similar to the original in the sense of a “great cozy vibe for beer and wine.” Litvack says the restaurant will have all your favorite pasta in vegetable format. Customers can expect similar porcelain plates in a fast-casual environment found at the original location at 459 N Roxbury Dr.

Impasta started in March 2020 as a carb-free delivery-only option but was able to open its Beverly Hills location in September of this year. The company favors vegetable-based, gluten-free, no-wheat-noodles such as cauliflower gnocchi, spaghetti squash, squash tagliatelle, and kelp noodles. These options are used as the base of the pasta bowls, then topped with a sauce such as Pomodoro, puttanesca, pesto and ricotta, and truffle mushroom. Impasta also offers rice bowls, salads, and cauliflower crust pizza. Although the restaurant leans towards a vegan-friendly menu, they also have some meat and cheese options.

“We are excited because it’s a whole other market for us,” Litvack tells What Now Los Angeles. “A lot of our target demographic lives on the west side. We’re hoping this second location will make our product more accessible to Los Angeles.”
