Duluth eatery from Executive Chef Chuck Woods offers an 'ever-changing curation of seasonally-driven fare' with a new dish rotated weekly

Executive Chef Chuck Woods and General Manager Barbara Woods on Saturday, November 28, will open Falling Rabbit in Duluth’s Parsons Alley, according to an announcement on the restaurant’s social media this week. The Woods are known for their time working in Chicago-based concepts like Girl and the Goatwhich is adding an outpost on the West Coast in downtown Los Angeles — and Tied House.

Falling Rabbit’s menu offers an “ever-changing curation of seasonally-driven fare” with a new dish rotated weekly. Current options include a Reuben Bao to start, Duck (chimi, hearts, hibiscus, sunchoke) for the main, and a Blood Orange Custard for dessert. The kid’s menu has several options like the Grilled Cheese and Avocado Smash. Craft cocktails are at the center of the beverage program with nine options including the Hat Trick — bourbon, FR amaretto, fig jam.

Studio SOGO’s Leslie Ellsworth designed the space and the restaurant got its inspiration from poems Chef Woods’ mother would recite to him as a child. “It became the inspiration for the moniker and whimsical nature of Falling Rabbit,” according to the restaurant’s website. It was the below poem — author unknown — that Woods used in developing the Falling Rabbit brand:

“I had one once, but the wheels fell off, so I said to the King, George, you hold the umbrella… I’ll walk in the rain for a while. But it was rabbit season, and they were falling out of the trees. Then I fell through a hole and here I am.”
