Viva Chicken, a fast casual charcoal-fire rotisserie joint out of Charlotte, NC, is coming to 1125 Ernest Barrett Pkwy.
The location is part of Barrett Corners, a new strip center that will also be home to popular restaurants Five Guys, Paradise Grills and Maple Street Biscuit Company. The strip development is replacing a Sweet Tomatoes restaurant. The buffet franchise closed all of its nearly 100 locations due to COVID-19 at the start of the pandemic in 2020.
Tomorrow’s News Today reports that a lease for the forthcoming Viva Chicken was recently finalized. An exact opening date for the restaurant has not been announced, but it is expected to open sometime in 2022.
Founded in 2013 by Chef Bruno Macchiavello and Randy Garcia, the brand specializes in the authentic Pollo a la Brasa (roasted or grilled chicken) found on the streets of Peru. There are currently several locations across North and South Carolina, as well as one in Utah.
The brand uses farm raised, all natural chicken that is marinated in a mixture of Peruvian spices and then cooked in hand built ovens that are imported from Peru. “Serving the hottest, freshest chicken, Viva promises distinctive and flavorful menu items packed with inspired recipes that will transport your taste buds,” a description from the brand’s website reads. Guests can order chicken by the quarter, half or whole.
Sides include arroz chaufa (Peruvian fried rice), chicken soup, plantains, sweet potato fries, and house salad. Specialty salads like Quinoa Stuffed Avocado, sandwiches and wraps are also offered. There’s even dessert – churro and tres leches cake; as well as limeades and juices that are made fresh daily.
