Oyster Coming This Spring to The Barlow

The team behind Sushi Kosho is bringing a new oyster and champagne concept to Sebastopol.

According to a pending beer and wine license found in state public records, a new restaurant called Oyster is coming to The Barlow at 6751 McKinley St. in Sebastopol. This information is confirmed on The Barlow’s website, which notes that Oyster is expected to open late this spring

Oyster is founded on two main principles: “the (delicious) culinary pairing of oysters and champagne, and a commitment to the profound environmental benefits of sustainable aquaculture,” The Barlow notes. The concept is brought to us by the team behind nearby Sushi Kosho. The team could not be reached for comment at the time of publication. 

Oyster will feature a raw bar and a menu of other shellfish-inspired items. They will also have a bubble-forward beverage list showcasing champagnes and sparkling wines from Sonoma County. Follow Oyster’s Facebook and Instagram pages for updates.
