Summerlin’s Rampart Casino, located in JW Marriott Las Vegas Resort & Spa, will soon be home to Spiedini Fiamma Italian Bistro, according to recent coverage in the Las Vegas Review-Journal. The restaurant will open in the space previously occupied by Spiedini Ristorante, an Italian hit long operated by chef Gustav Mauler. Spiedini Ristorante closed in the first months of the COVID-19 pandemic, back in March 2020.
Chef Mauler is not attached to the new restaurant, which will open in a fully redesigned space, with a new chef and a new menu. The reimagined space will feature a sizable bar, a private dining room, terrace seating, and an open kitchen. Work on the redesign is currently in progress.
The new name reflects changes in the space, with the open kitchen and the terrace’s fire pits providing the eponymous “fiamma” (flame). The Review-Journal coverage quotes a representative of the property who describes the mood as coastal, with wavelike blues and soft curves.
What Now was unable to reach a representative of Rampart Casino on Monday for comment. Spiedini Fiamma Italian Bistro is expected to open in September.
