Costa Vida Looks to Be Headed to Vegas at Last

The chain already has three locations operating in Nevada

With locations already operating in Elko, Sparks, and Reno, Mexican food chain Costa Vida Fresh Mexican Grill appears to be preparing, at last, to make the trip to Las Vegas. Recent paperwork submitted to Clark County shows plans for a Costa Vida location with a project valuation of more than $2.2 million. The paperwork does not provide an address, but a budget like that is news in itself.

Costa Vida’s menu features burritos, salads, enchiladas, tacos, and more. Guests choose proteins like Sweet Pork, Shredded Barbacoa Beef, Grilled Steak, and Raspberry Chipotle Chicken, finishing off their creations with choices of other ingredients like black, pinto, or refried beans; garnishes like pico de gallo and lettuce, and sauces like Tomatillo Cilantro Sauce.

A selection of Kids Meals is also available for younger diners, including the Taco Meal, the Quesadilla Meal, and the Enchilada Meal, each served with choice of protein plus cilantro-lime rice and beans.

What Now was unable to reach a representative of Costa Vida on Tuesday. No opening date has been announced for a Las Vegas Costa Vida Fresh Mexican Grill location.
