Chef Alon Shaya to Open Mediterranean Restaurant at Wynn Las Vegas

The as-yet-unnamed restaurant will feature a ninety-foot-waterfall

A new Mediterranean restaurant will open at Wynn Las Vegas next year under the direction of critically acclaimed chef Alon Shaya. The restaurant will serve Middle Eastern and Mediterranean cuisine in a former nightclub space at the casino resort, according to recent coverage by Eater Las Vegas.

Shaya is famous for New Orleans’s Saba and Denver’s Safta. Together with restaurateur Emily Shaya, his wife, Shaya is behind Pomegranate Hospitality, the restaurant consulting firm developing the Wynn project.

Shaya got his start here in Las Vegas twenty years ago, working with chef Jean-Louis Palladin. With this return to Vegas, he seems to be taking time to let the creative juices flow: as yet the brand has no name, and the menu has yet to be developed. But it’s reasonable to expect the chef’s proven homestyle cooking—plus a little extra flare. After all, the former Intrigue nightclub space occupies 14,000 square feet, with high ceilings, outdoor space, and a 90-foot waterfall!

At Wynn, Chef Shaya’s restaurant will be part of an exciting roster of food and drink destinations. These include coastal Mexican restaurant Casa Playa, Italian concept Cipriani, sushi and sashimi restaurant Mizumi, and SW Steakhouse.
