Fontainebleau Las Vegas’s December Opening May Include Several Groot Hospitality Concepts

According to coverage by Casino.org, the long-awaited debut of Fontainebleau Las Vegas—the first new resort on the Strip since the opening of Resorts World—will include several restaurants from South Florida’s Groot Hospitality.

Helmed by South Florida restaurateur David Grutman, Groot Hospitality operates several restaurants at Fontainebleau Miami Beach, including Southeast Asian restaurant Komodo and nightclub LIV.

These two concepts are expected to open locations in Fontainebleau Las Vegas when it launches this December.

What Now reached out to Grutman on Monday to inquire about plans for possible Groot Hospitality projects at the resort. Grutman declined to comment at this time.

Another restaurant opening at the resort is Chef Evan Funke’s Mother Wolf—or so everyone thought. A lawsuit by Relevant Group is attempting to stop this launch, according to the Las Vegas Review-Journal, but Ten Five Hospitality says the opening is still a go.
