Whisky Hotel is Back on Track and a Sister Speakeasy is in the Works

A whisky-themed lodge, a rooftop resto-bar, a groundfloor whisky haven, and a 1920s-style lounge are all on the way from restaurateur Adolfo Suaya

Nearly two years ago, What Now Los Angeles reported that hospitality powerhouse Adolfo Suaya’s Whisky Hotel would soon land at 1717 N. Wilcox Avenue. However, those dreams were nearly crushed as complications with the hired construction team saw the hotel’s progress halted completely.

Luckily, things are back on track with a new crew in charge of bringing the project to life, says Suaya…and this time, there’s more in store than originally anticipated. Here’s what we know, from the bottom up:

Down the street from the Whisky Hotel — a booze-centric concept that will feature a whisky fountain (pending some creativity on the health department’s part) — Suaya is building a speakeasy lounge, Noir, inspired by his time spent in Paris. In partnership with Ryan Sweeney of The Blind Donkey (Long Beach) and The Phoenix (LA), Noir will lean into the decorative themes of the 1920s and ‘30s, mimicking a brothel, says Suaya laughing. 

Next up is Whisky Hotel’s lobby-lounge which will feature a relaxing ambiance equipped with comfortable sofas and an array of sippable whiskeys.

Just next door to that, Whisky Bar will open its doors, featuring over 500 selections of whisky, scotch, and bourbon as well as a pairable Argentinian menu stacked with meat, potatoes, chimichurri, blood sausage, and more. 

Lastly, the hotel’s rooftop restaurant and bar, tentatively titled Spritz (Suaya is still toying with names), will feature lighter fare and a sophisticated beverage program. 

According to Suaya, Noir should be open next month and the hotel — with all of its concepts — will arrive at the end of 2023 or early 2024.
