A new Italian restaurant by Mosaic Hospitality Management will replace Etta in Culver City. Mosaic’s co-owner Paul Pruitt told Eater LA that the incoming restaurant will serve pasta and wood-fired dishes like pizza and grilled meats.
Chef Michael Santoro will helm the kitchen at the yet-to-be-named concept, Sky Strouth will act as COO and Alex Racioppi, Mosaic co-founder and CEO, is also a partner. Together with Pruitt, they will relaunch the eatery in January with mostly the same decor. Breakfast is slated to start on Jan. 3, and lunch and dinner is scheduled to start on Jan. 8. Brunch will be available at a later date.
According to the hospitality group’s website, Mosaic also runs the rooftop Canopy Club, located at the same property as the new restaurant, and will manage several F&B concepts at the W Hollywood, currently undergoing a nearly $100M renovation. Additionally, the group is behind Southland Sundries, a food hall coming to Culver City’s Entrada development that will feature five food outlets, two bars and rotating pop-ups.
Pruitt could not immediately be reached for comment.
