Sonoma County is in for a new treat from your friendly neighborhood bread bakers. Co-Owners Sean McGaughey and Melissa Yanc, the culinary artists who created Quail & Condor, are debuting a new concept called Troubadour at 381 Healdsburg Ave. near Healdsburg Plaza.

McGaughey confirms that Troubadour, set to open sometime in November, will be a sandwich shop specializing in world-class breads, California-inspired sides and of course, incredible sandwiches. While information about the new shop is sparse, they are currently hiring baker’s assistants, cooks, baristas, and cashiers.

McGaughey and Yanc were former chefs at SingleThread Farm – Restaurant – Inn. In 2019, Yanc won $25,000 on the Food Network Holiday Baking Champonship and later, with McGaughey, would go on to crowdfund over $20,000 to open a bakery in Healdsburg that would become Quail & Condor.

Since then, Quail & Condor has become a Healdsburg hotspot that usually has a line out the door. Customers rave over the inventively exquisite breads and pastries, such as the Pistachio Croissant and the Miche loaf, a strong sourdough comprised of fresh-milled rye, spelt, and pumpernickel.

In addition to already serving sandwiches at Quail & Condor, Yanc and McGaughey have also entertained with pop-ups and partnerships throughout Sonoma County. With incredible breads and a fine culinary background to boot, you can bet that Troubadour will have a menu beyond what we can imagine.
