Restaurateurs Behind Protégé Debuting New Cocktail Bar in Palo Alto

According to Palo Alto News, the restaurateurs behind Protégé — “an upscale casual restaurant featuring New American cuisine” — are debuting a new cocktail bar in the city. 

“We are planning a cocktail bar inspired by our favorite bars in Tokyo, London, and New York City, which are applying a similar level of creativity and technique to beverage that Michelin-starred chefs apply to cuisine,” Co-Owner Dennis Kelly shares with the Journal.

Coming to 299 California Avenue, taking over a spot formerly home to Calave, the yet-to-be-named eatery will land just across the street from Protégé, near establishments such as Rara, Zareen’s Palo Alto, and ZombieRunner Coffee.

“Harnessing the best of Japanese and American bartending styles, we will blend traditional technique with the ease and style of modern mixology,” Kelly continues. He adds, “We will also serve super-tasty snacks, all popping with salty, sweet, umami-driven flavors.”

An opening date has not been announced yet, so stay tuned for updates.
