Located just south of the intersection between S Rainbow Blvd and W Cactus Ave, Bellini Café offers a variety of coffee drinks, sandwiches, pizzas, desserts, and more. Its food is also available 24 hours a day at The Bounty Tavern, a bar in the same building. The cafe will soon undertake a transformation, however, and will emerge as On the Edge Cafe & Bakery.
“Rainbow and Cactus, that’s become the main corridor out of Mountains Edge,” co-owner Steven Horn Jr. told What Now Las Vegas. “The current business is kind of bare bones, so it’s a like a blank canvas. It’s going to be a more modern and upscale café.”
Renovations to the space have yet to begin, but Horn listed a number of coming features: a full to-go bar for coffees and pastries, dining and lounge areas, a dog-friendly patio, and an open baking area where guests can watch pastries and other foods being prepared. Specifics about changes in menu post-renovation aren’t available yet, but On the Edge is expected to ramp up its options with tea service and brunch on weekends.
Horn co-owns the café with his sister Amber Horn, who runs the café’s day-to-day operations. She was recently a contestant on Season 3 of Canadian cooking show the Great Chocolate Showdown, which stars Steven Hodge, Anna Olson, and Cynthia Stroud, and which has yet to air in the United States.
Renovations to transform Bellini Café into On the Edge Café and Bakery are expected to begin soon, with the goal of being completed by mid-May.
