La Casa de Juliette to Open in Centennial Hills

It’s a new concept from the team behind Sand Dollar Lounge

The team behind longtime Las Vegas favorite the Sand Dollar Lounge is preparing to open a new Mexican restaurant. La Casa de Juliette Cocina Mexicana, the new concept, will feature “Tulum-inspired furnishings, classic Mexican food, and a cocktail bar that incorporates a whole lot of fresh-squeezed juice,” says recent coverage by Eater Las Vegas.

The restaurant was inspired by co-owner Anthony Jamison’s grandmother, Julie Castillo, and her Mexican food. Co-owner Nathan Grates told What Now on Friday that the details on the menu are still under wraps, but Eater shares a few details:

“[Chef Eduardo “Lalo”] Saavedra will cook enchiladas the way Grandma Julie used to, layering meat and tortillas in a sheet pan to feed six to 10 people. The team’s French influence appears in the street corn, which will be combined with bone marrow and salsa macha crunchy chili oil.”

Grates told What Now on Friday that La Casa de Juliette is planning a July 10 opening—although that date is admittedly contingent on various sometimes unpredictable factors.

Opening at 7585 Norman Rockwell Lane, in a space previous occupied by several Mexican restaurants, La Casa de Juliette will join a food and drink community that includes restaurants like Nittaya’s Little Kitchen, Streets of New York, and Coffee Religion.
