According to a recent permit filing, Burnt Bridge Tavern will soon open its doors in Vancouver at 6700 NE 162nd Ave STE 417.
“We are planning for an opening in March. My husband and I just moved to Vancouver, and we had a restaurant called Goob’s Pizza in Springerville, Arizona for 13 years. We wanted to start thinking about retirement and knew that they wanted to retire in the PNW. That, combined with wanting to find another location for Goob’s, led us to Vancouver,” co-owner of Burnt Bridge, Holly Long, told What Now Portland.
“When we got here, we met with a developer to see what was up and coming, and we explored all over Oregon, but hadn’t begun to check into Washington yet. We caught wind of a restaurant that needed help while looking for another place for Goobs, but when then bought this restaurant.”
“We want to provide fresh, really good food. A big focus for the environment is on family and community, and we love to participate in a lot of charity and donations. That is a big passion of ours. Overall, we want to create the same environment as we did in Arizona.”
“Our menu will host things such as flatbreads, and some of the other stuff will be the same as we have done for the last 13 years. However, with the additional time we’ve had during this process, we have been able to develop our menu. We want something different than what we can usually find when going out to eat.”
“As much as possible, everything will be done by hand and from scratch. We still haven’t started on our bar menu yet. I have about 40 years in the business, and about 20 years for my husband, Tracy Long. Tracy was in the marketing industry prior to our restaurant, so he will be in charge of that, alongside having the support of some of our partners.”
“We want to make sure we do everything well and it’s something we’re proud of. It’ll be a home-like environment, where we want people to crave our food!”
