The quintessential Texas BBQ chain, Rudy’s Bar-B-Q, will soon open at a new location in Kyle, according to a recent filing with the State of Texas. The newest restaurant will be located at 19460 IH 35, occupying a 7,612 square foot space in a totally new building with a $1 million price tag. The upcoming Kyle Rudy’s, as all other Rudy’s locations, will be run by Ford Restaurant Group.
What Now Austin reached out to Ford Restaurant Group Director Harper Ford Rehme to inquire about potential opening dates and other important details, but she was not immediately available for comment.
Founded in Leon Springs in 1989 as an extension of a country store, Rudy’s has since been serving colorful Texas BBQ throughout the country. Some signature offerings include brisket, sausage and pulled pork which can be ordered with sides such as potato salad, cream corn, and coleslaw. As is typical for the region’s cuisine, foodies can order peach cobbler or pecan pie for dessert.
How does Rudy’s distinguish themselves from other BBQ restaurants in a crowded market? On their website Rudy’s states “our pits are 100% wood fired with oak, a slower burning wood than the mesquite used by others. Along with time and oak, we cook with a dry spice that ensures each plate of Rudy’s Bar-B-Q is perfectly ready for you.”
Until the Kyle Rudy’s opens its doors, BBQ fans may find other locations in nearby Austin and Round Rock.
