Chicken-Centered Fast Casual Brand Prepping San Marcos Spot

The growing chain will inhabit the former Mucho Taco.

According to recent public records, growing fast-casual brand El Pollo Rico will soon begin optimizing its upcoming location at 1109 N. I-35 Frontage Road in San Marcos, within the former Mucho Taco.

“Renovation of kitchen about 570 square footage adding two walls, changing existing lighting to new ones,adding a vent-a -hood and replacing a Ac unit,” the document states, projecting a late 2023 completion.

El Pollo Rico’s menu includes charcoal-grilled chicken meals with a variety of sides—rice, refried beans, and sweet plantains, to name a few. A few starters include chips and queso, guacamole, or chips and salsa. Diners can also enjoy flautas, quesadillas, tacos, burritos, and burgers. Flan, churros, and tres leches are dessert options.

While diners wait for the San Marcos location to open, they can sample the menu at more than a dozen other El Pollo Rico currently in operation across the Austin area.
