Ambitious Bar & Kitchen Coming to Windsor Park

Busty’s Bar, an ambitious new bar & kitchen, will come to the Windsor Park neighborhood of Austin in late 2023 or early 2024, according to recent reporting in Eater. The establishment will be led by Austin food & beverage standouts Busty Morris and James Durham.

“The kitchen will serve truck stop-diner-Waffle House-inspired food,” head chef James Durham tells What Now Austin.

“I grew up in Texas and Tex-Mex cuisine is near and dear to me. I recently took a trip to El Paso and got turned on to West Texas burritos — no rice, lettuce, or filler. Basically they’re just made of the most amazing thick, grandma style flour tortillas, beans, and a protein. At Busty’s I want to try a picadillo, make my own flour tortillas.”

Among other potential offerings on Durham’s mind are “Rolled taquitos, served in a cup with dipping sauce,” onion rings, chili-cheese fries, and a “really good turkey club.” Mr. Durham was also excited to announce that the restaurant would be serving Miller High Life from the keg, an apparent first in the State of Texas “in many years.” According to Eater, “The drinks menu will include classic drinks as well as some tiki options.”

No opening date has been announced. Until Busty’s finally opens its doors, eager readers can sample Durham’s creations at his Jimjams Biscuits pop-ups across the Austin metro.
