Insomnia Cookies could be headed for downtown Phoenix. According to Construction Journal, the project is currently in the bidding process for a build-out and renovation of One E. Washington St. Construction is scheduled to begin in October of this year, which implies an opening may happen in the first half of 2023.
Insomnia Cookies was founded in 2003 by Seth Berkowitz, who at that point was a student at the University of Pennsylvania and saw an insatiable hunger for warm cookies among his fellow students during late-night study sessions. Berkowitz’s business of baking and delivering fresh cookies directly to students late at night took off, and by 2006 he opened his first brick and mortar in Syracuse, New York.
Ten years later, they opened their 100th store and continue to grow to this day. From classic Chocolate Chunk to deluxe flavors like Salted Caramel, over a dozen flavors of cookies can be delivered warm to the doors of individuals or companies across the nation.
