Founded by brothers Fausto and Roland DiPietro in 1990 using their mother’s Sicilian recipes, Fausto’s Bistro has built a loyal following in Metairie with its menu of classic dishes.
The restaurant recently underwent an ownership change, but that doesn’t mean Fausto’s is no longer a family restaurant. New owners and cousins Michael Vicari and Steven Gambino have announced plans for Fausto’s to remain a classic red sauce joint when it reopens this spring. Vicari comes to Fausto’s as a fan, but also as a successful restauranteur. He built up a chain of Dairy Queen franchises around Louisiana and recently sold them before buying into Fausto’s.
According to reports, Vicari and Gambino are in the process of renovating the restaurant to make it larger and more accommodating. While capacity will still be a modest 60 seats, there will be more space between guests. Additional renovations will enhance the acoustics to make the space more conversation-friendly. Renovations to the back of the house will allow the staff to make more of its menu from scratch.
