As James Beard-nominated Chef Pushkar Marathe and restaurateur Andy Dugard prepare to launch the second outpost of their first restaurant, Stage Kitchen & Bar, at Boca Raton’s Restaurant Row, the duo—who make up Flavor Builders Hospitality—are also preparing to expand their Mango Mercado concept. A new Mango Mercado is planned for West Palm Beach’s CityPlace shopping center, where recent coverage by the South Florida Sun-Sentinel says the breakfast and lunch counter is expected to launch by mid-2025.

“In addition to grab-and-go ready-made items and a curated market offering – think rotisserie chicken, smoked olives, butter chicken sauce, house-made dressings, condiments, Aioli Bakery breads, desserts, wine and beer – Mango Mercado offers made-to-order breakfast and lunch sandwiches, soups, salads, and more,” says the Mango Mercado website’s About page.

Mango Mercado’s menus have featured sandwiches like The Coronation (curried chicken salad, toasted seeded sourdough, butter lettuce, red onion), the Italian Sandwich (sopressata, mortadella, coppa, provolone, tomato, shrettuce, Calabrian chili aioli), and the “Bahn Mi” (hoagi, pulled pork, chicken pate, cilantro, mint, pickled vegetables). There are also soups, salads, and breakfast choices like Avocado Toast and a Breakfast Piadina (eggs, cheddar, bacon, fancy sauce).

“Mango Mercado is a happy place where you can walk in, look at the daily offering, order a burger or sandwich, custom build a salad, take comfort in daily soups or one of our hot menu items, and take it to go or dine in,” says Chef Pushkar Marathe on the Mango Mercado site. “Mango Mercado is the place I personally want to go for something fast-casual where quality and flavor aren’t sacrificed just because it is quick and easy.”
