Founded in Chicago in 2014 by Jared Rouben and Jeremy Cohn, Moody Tongue Brewing Company is a project “built on the philosophy of culinary brewing, appealing to those with a discerning palate – or as they describe, a ‘moody tongue.”
“Each year,” says the Moody Tongue website’s About page, “the brewery offers seven perennial beers, such as the Orange Blossom Belgian Blonde, Juiced Lychee IPA and Caramelized Chocolate Churro Porter, as well as a selection of limited release beers, such as the Pressed Asian Pear Saison and Shaved Black Truffle Pilsner, and wine or whiskey barrel-aged beers.”
Moody Tongue has thus expanded not only along the lines of brewing but on the culinary side as well. It has expanded into New York with both Moody Tongue Sushi and Moody Tongue Pizza. And now, it’s bringing the Moody Tongue Pizza to West Palm Beach, opening soon at the Hilton.
“Located within an intimate space found in the newly renovated Hilton West Palm Beach, Moody Tongue Sushi presents an exclusive 15 course omakase experience highlighting a hyper-seasonal, elevated sushi menu from Executive Sushi Chef Hiromi Iwakiri alongside a curated beer pairing from MICHELIN-starred Moody Tongue Brewery’s acclaimed brewmaster Jared Rouben,” says a description on the website.
“Guests will enjoy an evolving menu highlighting pairings such as Hokkaido Sea Scallop, served with edamame and ossetra caviar, with a Pressed Asian Pear Saison; Madai, served with Florida orange zest and sea salt, with an Orange Blossom Belgian Blonde; and a decadent Florida Stone Crab Hand Roll, adorned with green apple and sauce dijonnaise, beautifully paired with a Cherry Oud Bruin. A curated menu of spirits, wines and cocktails is available as well.”
