Carbonaro’s, a new, affordable, fast-casual Italian eatery, is preparing to debut in the College Area at 5120 College Avenue, Suite 125.
The company’s first location is set to open near SDSU, according to a liquor license application. Owner Mariano Liga tells What Now San Diego that the ownership team, which includes Andrea Carbonaro, Ercole Rubino, Giuseppe Cascio, and Fabricio Paciente, is putting on the finishing cosmetic touches on Carbonaro’s flagship store, to hopefully open next month. He says this first location will be open by March at the latest, offering a concept similar to Chipotle but for Italian food.
Liga tells What Nos San Diego that customers can customize their fresh pasta bowls according to their preferences, using high-quality imported Italian ingredients. On top of endless pasta possibilities, Carbonaro’s will also serve some appetizers and desserts, all being affordable. Liga says anyone with $15 can get a delicious meal made with the “Ferrari of Pasta Makers.” All pasta and sauces will be made with fresh products and their recipes.
This is just the beginning for Carbonaros, as the company is already planning a second location in San Diego County, which Liga calls the “main base” for the company. Liga tells What Now San Diego that he hopes to open around three to five locations in the first year via a copy-and-paste method based on this first SDSU site. After this, the company expects to expand throughout California, including Los Angeles and San Francisco, with the help of franchising, which the restaurant hopes to introduce soon. Until then, nearby San Diegans should be excited to have a more affordable, authentic Italian eatery opening soon.
