Chicken Salad Chick, a “chain outlet specializing in many different types of chicken salads” will continue its expansion into Central Florida with a new Rockledge outpost at 1995 Viera Blvd.

“We will be open hopefully in May! Our Melbourne will open end of February! If you want to try some FREE samples we will be at Intracoastal Brewing Company for the market on Dec 8!! We can’t wait to serve you in Viera!”
On the menu — in addition to more than ten chicken salad options, categorized as traditional, spicy, savory, and fruity & nutty — are variations of pimento cheese, fruit and vegetable salads, soups, and sandwiches.
What Now Orlando reached franchisee James Brown who says that they are currently in the process of permitting and building out the spot.
When asked why he chose Viera as a location for this upcoming store, he points to convenience.
“We live in the area,” Brown says. “It’s an upcoming metropolis with the demographic we’re looking for, close to the highway.”
Opening is projected for mid-summer.
