According to an article from the Statesman Journal, Adobe Restaurant and Bar aims to debut in the former Epilogue Kitchen and Cocktails space at 3996 Cousteau Drive SE.

“We do not have an exact date for our opening just yet, but our goal is the end of March. Patrons can expect to see popular food items from Latin America, crafted with unique and fresh ingredients. From the bar, fun and unique cocktails. Lots of tequila and mezcal options, as well as infused tequila,” co-owner Itzel Sagastume told What Now Portland.

“The idea of the design I created with the space was keeping the organic rustic look alive, but detailed in areas that bring a modern and contemporary feel to it. Think refined wood, textured walls, modern accents, and more.”

“Adobe has been a vision for a long time, a dream almost. Right before COVID-19, Diego (the other co-owner) and I wanted to create a space where people could enjoy our craft, take pictures, and have a good time.”

“We had to put our idea on hold and were unsure how or when we would execute, but just knew we would find a way. Adobe is such a special place for us and we cannot wait to open our doors so people can experience what we do.”
“Being raised in the Bay Area, there is so much of what Adobe will bring to the PNW that I have not seen before, so that absolutely pumps the excitement and we hope the community will love this new project as much as we do.”
