Dynamic Plano Duo to Open Centro on the Square

The new concept from Brian Dunne and George Stergios will open in early spring of next year.

A pair of restaurant heavy-hitters will be making McKinney’s spring a bit more delicious in 2025. Plano favorites Brian Dunne and George Stergios are working together to bring Centro on the Square to hungry locals, reports Culture Map Dallas.

The new concept will be moving into an historic space located at 112 East Louisiana Street. The 100 year old building housed Harvest until it relocated in 2023. Centro on the Square does not currently have an official opening date, however Dunne and Stergios are shooting for an early spring debut.

While the cuisine and concept are yet to be established, Centro on the Square promises to be an important culinary moment for McKinney. Stergios and Dunne bring a wealth of experience and knowledge to the table from long careers in hospitality.

Stergios, who comes from a family of dining professionals, is the mastermind behind Knife Steakhouse. The restaurateur also logged hours at the Highland Dallas hotel as the head of food and beverage. Dunne founded the Mexican Bar Company in 2018, after working in hospitality in DC, New York, and Chicago.

The duo are committed to ensuring Centro on the Square offers a topnotch dining program, complete with high-quality cocktails and service to the McKinney community.
