Tiffin’s India Cafe is growing its presence in Colorado with a second location to open in 2022. Owner Rabi Gurung told What Now Denver the new location’s opening date depends on the buildout, but he’s hoping to open sometime next spring.
Gurung is working with engineers to develop a plan for the full build-out of the empty space at 1232 S. Hover St., Longmont, CO 80501. “This location seems to be very appealing to me. We are going to have a lot of foot traffic,” Gurung shared.
As a family-owned restaurant, Tiffin’s India Cafe takes pride in making their dishes feel like diners are eating at home. “We take time to cook,” Gurung explained, “to make sure it’s like home-cooked food, the taste and everything.”
Tiffin’s most popular item is the dosa, which Gurung describes as being similar to a pancake or crepe. “It’s made from a fermented batter that consists of lentils and rice,” he explained. Different flavors are available including the Masala Dosa, which is stuffed with a spiced potato and onion sabiji, a vegetable mixture.
Vegetarian plates and curries, along with meat curries that include chicken, lamb, and shrimp are also on the menu.
The original Tiffin’s opened in 2012 at 2416 Arapahoe Ave. in Boulder, and Gurung purchased the restaurant from a family friend in 2018. Gurung has two other business partners, including Chef Sandeep Lama. The chef created Tiffin’s recipes and will provide food quality support at the new location.
Gurung plans to include a full bar at the new location once an alcohol license is approved.
