According to a recent liquor license application, the newly opened Holiday Inn in Monterey Park has plans to add a breakfast restaurant called Toast to Toast. James Chou is listed as the licensee on the application.

Chou is the CEO of Pacific Plaza Premier, the full service real estate firm behind the mixed-use Pacific Plaza Monterey Park development where Holiday Inn is housed.

“Pacific Plaza Monterey Park…will offer 5,381 square feet of new restaurant space, 136 hotel rooms, and 84 multifamily residential units,” says the firm’s website

Toast to Toast is a fast casual, counter service concept exclusive to Holiday Inn and serves items like waffles, biscuits and gravy, scrambled eggs, as well as breakfast bowls, sandwiches and wraps.
