SKYBIRD Ready to Take Over Montreal and Beyond

The fresh Asian grill concept expects to open at least three more locations in Montreal before expanding outward

SKYBIRD, North America’s newest fast-casual sensation serving chef-inspired bowls and banh mi, is getting ready to expand throughout Montreal, including opening a new location at 14845 Pierrefonds Blvd.

Earlier this year, the fresh Asian grill concept opened its newest site in Montreal’s Mile End at 248 Jean-Talon West, and this appears to be just the beginning. Next up, SKYBIRD plans to open a new location in Pierrefonds, and Co-owner Andrew Infantino tells What Now Montreal that this location is expected to open next Friday, March 14th.

While this opening is approaching, the company plans to open more locations. Co-owner and restaurateur Rio Infantino is working on a handful of new locations in the area, according to Retailer Insider, and eventually wants to expand throughout North America. Andrew tells What Now that the team comes from the background of being national restauranteurs, and they have high expectations of expanding the chain with multiple locations across Montreal and then looking outward to the rest of Canada.

“We’re going to open up three to four stores in Montreal where we live now, and then that will be the prototype, and we’re going to expand it across Canada and simultaneously in the USA,” Infantino tells Retail Insider regarding SKYBIRD. “We’re already working with some American brand representatives that I think is going to pan out very quickly. We have something almost signed. We’ll start with the eastern coast of the U.S. and try to go from there try to get some traction. We could be in a mall. The kiosk size plus off-site storage. It could be as small as 450 square feet or so in a mall setting. In in-line stores, or we prefer end caps, a store would generally have between 1,200 and 1,600 square feet.”

SKYBIRD offers a modern twist on Pan-Asian flavors in a fast-casual setting. Customers can customize bowls and banh mi sandwiches using oven-grilled proteins like Halal-certified meats and plant-based options. With six in-house sauces and a choice of fresh ingredients, each meal is tailored to individual tastes. The drink menu features refreshing options, including Vietnamese iced coffee and Iced Matcha Latte for a relaxing experience.
