According to recent public records, a new Vietnamese establishment is coming to Merritt Island. Saigon Pho Banh Mi & Boba will be found at 97 E Merritt Ave.
“Saigon Pho Banh Mi & Boba is a family owned Vietnamese restaurant based on Merritt Island Florida,” a recent Facebook post states.
“At Saigon Pho Banh Mi & Boba, we are anticipating our grand opening sometime in April 2025.”
Following up on the scant online information, owner Thanh Vu tells What Now Orlando that opening will be more like “late April or early May.”
Elaborating on the menu, Mr. Vu says they’ll feature a “hot skillet,” a plate which consists of “two eggs, homemade meatballs, and bulgogi beef and spoon of pate served in a skillet and it comes with a baguette.”
“We’ll also have fried chicken and other Vietnamese dishes,” he adds.
When asked why they decided on this particular location, Mr. Vu says “We always wanted to be part of the Merritt Island community and introduce Vietnamese food.”
“We’re very proud of what we do.”
