CAVA Mezze Grill Plans Burlington Eatery

This new addition will be one of many CAVA locations in the state.

It looks like a new CAVA Mezze Grill restaurant is coming to Burlington.

According to Daily Times Chronicle, the fast-casual eatery will open inside the former Tower Records site at 101 Middlesex Turnpike, alongside Tatte Bakery & Cafe and a yoga studio. The new CAVA location is expected to feature an outdoor patio.

While CAVA and the yoga studio have not yet filed paperwork to occupy the premises, the property owner announced the news during a recent Planning Board meeting.

CAVA is renowned for its Mediterranean-inspired menu, offering a tempting selection of salad and grain bowls such as the Tahini Caesar, as well as popular pita wraps like the Crispy Falafel. These main dishes are complemented by an assortment of side dips and desserts, including items like hummus and blondies.

Since its founding in 2006, CAVA has expanded into a nationwide sensation with more than 300 locations, over 10 of which are scattered throughout Greater Boston. Similar to Chipotle, CAVA distinguishes itself in the fast-food industry with its unique business model. Except for one licensed location, all of its restaurants are company-owned.
