According to a recent permit filing, Pique Nique will soon open in the Wallingford area at 4459 Fremont Ave N #1.
“Our goal is to be opening soon, but we are waiting on a few last-minute details,” owner and executive chef Stephan Bourgand told What Now Seattle.
“Pique-nique is a culinary playground where the time-honored tradition of picnicking meets modern gastronomy. It’s an elevated grab-and-go concept that caters to the worker on the go while bringing some elegance and fun. From a perfect French baguette with salami and butter to a brioche roll with mushroom conserva, parmesan, and microgreens, we will explore new ways to upgrade food on the go.”
“A picnic doesn’t only need to happen on a special occasion. Curating an eating experience outside of the home can be a pleasure, and we want to help guide people along their journey. Besides fresh sandwiches and salads will also be offering seasonal juices and smoothies. We will also have a small market with goodies chosen as the kinds of things one would need to complete their ultimate picnic.”
“Even the weekday worker can grab a few snacks to get them through the moments when a little nutritional boost is required during the day. We have found Washington-based products to fill our shelves as well as some lovely international goodies- I am particularly excited to have la fermiere yogurt, one of my personal favorites from when I was living in France for 15 years,” Stephan added.
In addition to the food options, Pique will also have a small retail area for natural wines. When Stephan was the chef at Paragon before it closed, he then launched a natural wine program that offered a fun educational moment for Queen Anne. The aesthetic of Pique is also described as clean and inviting, with inspiration from perfume boutiques and labels for the overall feel of the space and the branding.
