San Marcos-Based Dos Gatos Kolache Bakery Is Warming Up to Open a Shop in New Braunfels

Dos Gatos Kolache Bakery, a San Marcos-based business known for Czech pastries, is expanding in the San Antonio area — planning to open its first location in New Braunfels.

According to a filing with the Texas Department of Licensing and Registration, the bakery will open at 1164 FM306, near the Mexican restaurant El Nopalito, On the Grind coffeeshop, a Shell station, and tractor-dealer Texas Tractor Country.

“Our whole goal in San Marcos was to bring something to town that hadn’t been to town before,” Co-Owner Chase Katz tells What Now San Antonio, adding, “New Braunfels is a natural move for us because it has a bigger population and it’s about 15 minutes down the road.”

The filing provides further insight, disclosing that the “new construction of a wood frame, one-story kolache bakery and drive-thru” will begin this October and be completed in February 2024. For an estimated $750,000, the project will be executed by the Austin-based firm Point B Design Group.

According to Katz, the upcoming New Braunfels bakery will offer drive-thru and walk-up service only.

For readers who are unfamiliar with Dos Gatos, the bakery was founded in San Marcos in 2009. Now, the business operates two pastry shops in the city, and has become a popular breakfast destination for the Texas State University community.

On the menu are classic Czech kolaches such as cherry and cream, cottage cheese, and apple, as well as “Texas” kolaches — which by the large majority are filled with meat and cheese. A full coffee program will also be offered at the New Braunfels outpost.

“Our opening date is hopefully early next year,” shares Katz.
