Fast-Casual Tex-Mex Chain Las Palapas Is Expanding to Schertz

According to a recently submitted permit application, local fast-casual Tex-Mex chain Las Palapas is expanding — planning to debut a new outpost in Schertz.

Coming to 16846 I-35 N, the eatery will land near establishments such as Baptist Neighborhood Hospital, Frost Bank, and Staybridge Suites.

What Now San Antonio contacted the company’s CEO and majority owner, Wayne Detmar, to inquire about the expansion, but he could not provide additional information before publication.

Nevertheless, the filing offers further insight.

Renovations to the existing 7,531-square-foot space are scheduled to begin on July 30 and finish on December 10. For an estimated $1,200,000, the project will be carried out by San Antonio-based firm AP Architects.

For readers who are unfamiliar with the concept, Las Palapas was founded in San Antonio in 1981 and now operates over 20 outposts across the city’s metro area. The menu ranges from breakfast items such as tacos and chilaquiles to lunch and dinner options including soups, burritos, flautas, and enchilada plates.
