Stacey Eames could open new location in Aurora space, or nearby options in Virginia-Highland area.

What Now Atlanta (WNA) Tuesday reported that Atlanta mainstay Highland Bakery would open a new concept in Virginia-Highland, at 992 North Highland Ave., after permits were filed with City of Atlanta earlier this week.

A lease has not been secured for the space formerly occupied by Aurora Coffee, Stacey Eames, owner of Highland Bakery, told WNA in a telephone interview Wednesday.

“I got my start around the same time Aurora coffee did, and I was in business with them, so I spent a lot of time there in my early days,” Eames said. “It would be like coming full circle to have that space.”

Eames is looking to open a new concept, the sixth location under the Highland Bakery umbrella, most likely in the Virginia-Highland area. The concept and its name are still under development.

The landlord of the Aurora Coffee space is shopping out the idea to several coffee-centric concepts including Highland Bakery, according to Eames.

As for the new concept, Eames said she’d keep our readers in-the-know as soon as a lease has been executed.
