Fontainebleau Las Vegas Launches New Season of Dining, Daylife, and Star Power

Locals and visitors alike can now indulge in poolside cinema, hands-on culinary classes, and Pitbull’s expanded residency at the Strip’s most ambitious new resort.

Fontainebleau Las Vegas has entered its next chapter with a flurry of immersive experiences that blend culinary excellence, luxury leisure, and big-name entertainment. This season, the 67-story megaresort is unveiling a new lineup that includes public access to its poolside dining, the return of its signature daylife scene, hands-on masterclasses through its “Signature Series,” and an extended residency by GRAMMY®-winning artist Pitbull.

Following a headline-making debut in December 2023, the resort has quickly emerged as a cultural hub on the north end of the Strip, and its 2025 offerings double down on that reputation—inviting both travelers and Las Vegas locals to participate.

Pitbull Adds Fall Dates to Headline Residency

The energy is dialed all the way up at BleauLive Theater, where global superstar Pitbull has extended his Vegas After Dark residency with four new fall performances. Known for his genre-blending hits and high-voltage stage presence, the artist will now perform during both Mexican Independence Day weekend (Sept. 12–13) and the Formula 1 Las Vegas Grand Prix (Nov. 21–22).

The added dates build on already sold-out May performances and showcase Fontainebleau’s growing stature as a serious destination for live entertainment. Tickets are on sale at fontainebleaulasvegas.com, with presales available for fans and hotel guests.

La Côte Opens to the Public With Prix-Fixe Menus and Al Fresco Charm

Previously reserved for resort guests, La Côte—Fontainebleau’s French-Mediterranean poolside restaurant—is now officially open to the public. Set along the Oasis Pool, the restaurant offers breakfast, brunch, and lunch service, with a new three-course prix-fixe lunch menu available Thursdays through Mondays for $50 per person.

Executive Chef Francisco Campa Fuentes curates a lineup that includes Ahi Tuna Tartare, Chicken Milanese, and Baklava, with à la carte options like Blackened Mahi Tacos and Tuna Niçoise rounding out the menu.

“With the debut of our prix-fixe lunch and open access, La Côte becomes the perfect midday escape for locals and visitors alike,” said Anthony Olheiser, SVP of Food and Beverage.

Valet validation is available for diners, making access seamless for off-property guests.

Oasis Pool Reopens With LIV Beach, Cinema Club, and No-Fee Cabana Access

The centerpiece of Fontainebleau’s outdoor experience, the Oasis Pool, reopened on March 7 with a revamped layout and a programming calendar packed with experiences for every type of guest.

The six-acre pool district boasts six distinct pool environments—from the vibrant Grand Pool to 21+ escapes like Legacy and La Mer. VIP options include Gigi’s Mediterranean cabanas and FB Slim’s bar, while the 2,300-square-foot gaming area adds a unique twist to the poolside experience.

Returning this season is LIV Beach, the high-energy dayclub produced by David Grutman’s Groot Hospitality, with scheduled performances by Tiësto, David Guetta, and Dom Dolla, among others. Meanwhile, families and film buffs can enjoy Oasis Cinema Club, a recurring outdoor movie night featuring titles like Barbie, Top Gun: Maverick, and Inside Out 2, with admission waived for guests and Fontainebleau Rewards members.

Daybed and cabana fees are waived this year, requiring only a $300 food and beverage minimum—making it one of the most accessible luxury pool experiences on the Strip.

Signature Series Returns With Culinary and Wellness Experiences

Fontainebleau’s Signature Series returns in 2025 with an even broader lineup of immersive events. Designed for hotel guests and locals alike, these small-format classes and tasting experiences offer behind-the-scenes access to some of the Strip’s top chefs, sommeliers, and wellness professionals.

Upcoming highlights include:

“A Passion for Pasta” (May 22): Learn handmade pasta techniques with Chef Kyle Bradish at Vida, paired with Italian wines.

“Sip & Savor: Whisky & Sushi” (June 14): A nine-course omakase experience paired with Japanese whiskies at ITO.

“The Mindful Reset” (Aug. 7 & Oct. 9): A rejuvenating wellness class featuring meditation, breathwork, and sound bathing at Lapis Spa.

“Deck the Doors” (Nov. 29): A holiday wreath-making workshop complete with seasonal cocktails and guidance from the in-house horticulture team.

Events are ticketed and intimate (most capped at 12–15 guests) and can be booked online via the Fontainebleau Las Vegas website.
