The crown jewel of a new mixed-use development in Lafayette will be a self-serve sushi spot called Fish Box Sushi. Located in a corner unit in the front of the newly opened The Waters at Settlers Trace, Fish Box Sushi allows customers to walk in, grab a takeout box, and fill that box with traditional pieces of sushi, including rolls, tofu pockets, and nigiri. There will also be torched sushi available, which is unique to the Lafayette area. Customers can then pay for their box of sushi at a rate of $17.99 per pound. The restaurant is slated to open by the end of July.
Ownership partner Timmy Nguyen recently told What Now New Orleans that every item available will be fresh and made with quality ingredients. Occasionally, Fish Box Sushi will source premium sushi ingredients like toro (fatty tuna) and uni (sea urchin roe).
“We don’t believe in going cheap just to make a profit,” he said. “It’s the quality that makes us different: If you have good quality fish, the taste is different and the smell is different.”
Nguyen added that two sushi chefs working at the restaurant are also ownership partners.
“The owners are there, on the spot, rolling the sushi themselves,” he said. “We believe in quality, and no one else will ever care about our business as much as us. So, when it comes to freshness and quality, if my partners wouldn’t eat it, if I wouldn’t eat it, we wouldn’t want the public to eat it.”
The Waters at Settlers Trace held a grand opening celebration earlier this year. The apartment development features a row of commercial spaces near the road. Fish Box Sushi will be located in a corner unit that includes a large outdoor patio, which is an exclusive feature in this development.
