Jade Dragon Wok-Out is a Chinese restaurant in Duluth known for its soups, appetizers, and wings. The restaurant underwent a routine health inspection on Monday, when several violations of food safety guidelines were observed during the inspection.
The inspector noted a lack of active managerial control and multiple risk factors. The PIC failed to demonstrate food safety knowledge. The inspector observed an employee enter the kitchen from outside and start to handle plates without washing their hands first.
As per the inspection report, the facility did not have a procedure for properly cleaning bodily fluids. Staff were instructed on proper clean-up of vomit and diarrhea incidents. The inspector observed unwashed peppers stored over washed zucchini, unwashed mushrooms stored over cooked chicken, and raw beef stored over chicken wings. PIC arranged the cooler to store food items appropriately.
Food items were not held at proper temperatures. A cleanliness issue was corrected on-site. A sanitizer bottle used to clean tables had a concentration above 100ppm. PIC diluted the sanitizer to the required concentration.
The report highlights that three working containers of chemicals were not labeled with a common name. PIC labeled items on-site. Working containers were used for storing poisonous or toxic materials.
The inspecting officer observed at least 5 wet wiping cloths stored on the counter. PIC placed the clothes in the sanitizer. About 20 clean pans were stacked wet. The utensils need to be dried before stacking them.
The inspector observed an upright cooler with an ambient air of 55°F. This could not be corrected on-site. The report indicated the need for a thorough cleaning to remove debris from the walk-in cooler walls and shelves. Follow-Up Requirements
As per the imminent violations found at the restaurant, it received a score of 54 and a grade of U after the inspection. The restaurant is expected to eliminate all the listed violations as a follow-up inspection will take place within the next 10 days. Repeated non-compliance with the food safety code may result in permit suspension.
