The owners of the Baon Kainan food cart are bringing a sit-down location to the city.
Eater Portland recently reported that Baon Kainan will be turning into a full-service restaurant called Pamana, and it will be housed at The Hoxton hotel, 15 NW 4th Avenue. This is part of a restaurant residency for Ethan and Geri Leung. The space is set to open by Sept. 3.
Their current food cart is at 1027 NE Alberta Street in the Alberta neighborhood. The Hoxton hotel space came as a great opportunity for the owners as the goal has been a permanent restaurant since they started Baon. Ethan is a longtime chef, and together they had been brainstorming ideas for a new concept.
“We’ve always wanted a restaurant, the cart was a stepping stone,” Geri told What Now Portland.
Baon Kainan is known for Filipino breakfast dishes. Ethan said a few of the dishes that will be offered at the new space include bistek and eggs, french toast with saba bananas and jackfruit, and rice pancakes topped with ube glaze. Sandwiches will be added to their menu, and in the fall they have plans to introduce dinner concepts.
“Specifically, we’re excited about seafood dishes and homemade noodles,” Geri said.
The Hoxton hotel is near restaurants and bars in Old Portland like 2NW5 cocktail bar, Charlie’s Deli & Delivery sandwich shop and Deadstock Coffee Roasters. It isn’t yet confirmed where in the building the restaurant will be housed.
