The latest Yountville restaurant will launch on Thursday, August 14, at 6525 Washington St. Clementine brings a creative twist to Wine Country dining, pairing bright, seasonal dishes with a relaxed, cheerful atmosphere.
A Unique Mediterranean Influence on California Cuisine
Clementine blends Mediterranean influences with Northern California’s seasonal bounty for a vibrant, ingredient-driven menu. Executive Chef Rebecca Weitzman’s ingredient-driven menu focuses on produce from the peak season. Dishes are thoughtfully plated, offering visual appeal alongside bold flavors.
The menu opens with stone-fired flatbreads and seafood starters like Frog Hollow Nectarine & Smoky Prosciutto with Stracciatella and Vin Cotto. Other highlights include shareables like Burrata with Savory Corn Pancakes. Guests can also enjoy Wood Grilled Tomales Bay Oysters with Charred Clementine-Chervil Butter.
Main course highlights include Chilled Lobster Tail and Gemelli Pasta with Lobster Bottarga. Slow Baked Halibut with Black Olive Aioli and Grilled Chicken Paillard Fattoush are other tempting items.
Desserts at the Yountville-based dining spot feature signature clementine sorbet and rotating house-made gelatos.

The bar menu features a trio of Aperol-based cocktails, including the Aperol Classico Spritz, Aperol Betty, and Aperol Gin Fizz. Guests can also try its non-alcoholic spritzes, such as Clementine Tonic and Risky Business. Other beverages are the Clementine Margarita and Clemencello Drop.

A Warm and Vibrant Ambiance
Clementine trades formal white tablecloths for a lively, citrus-inspired design that feels both fresh and inviting. The designs are a collaborative effort of Julie King (the designer credited in VOGUE and ELLE) and Candace Hickman (known for Soho House).
Hand-illustrated menus, a cozy outdoor patio shaded by citrus and olive trees, and custom embroidered aprons make the Yountville location a desirable restaurant.

Executive Chef Rebecca Weitzman draws on global culinary experience, blending diverse influences into a cohesive, seasonal menu. Weitzman won a Michelin Green Star at Flora Farms in San José del Cabo for her approach to farm-forward cooking and sustainability. As Forgeois Group’s corporate chef in Manhattan, she managed five French facilities.
Other portfolio mentions include Cedar Lakes Estate in upstate New York and Michelin-star chef-led Chalk Point Kitchen in SoHo.
Weitzman also serves as a partner at Colorado’s acclaimed Carboy Winery. As the Culinary Director and Executive Chef at Estate Yountville, she managed the culinary department. Clementine is her first independent restaurant.
