“Not famous but known,” says signage in the windows of the upcoming PopUp Bagels in Aventura. It’s a long-awaited opening, and the excitement is starting to pick up in intensity.
“I’ve heard great things about PopUp Bagels out of NYC and they’re finally coming to Aventura, opening soon in the Publix Plaza right behind Aventura Mall,” says a post published in the South Florida Sun-Sentinel’s Let’s Eat, South Florida Facebook group.
Wait a moment, though. That signage—it says the brand is “not famous?” Are we sure about that? Back in July Nation’s Restaurant News reported that PopUp Bagels is at work on a 10-state expansion with the signing of three hundred franchise locations. 300! If PopUp Bagels isn’t famous yet, it’s certainly going to be.
“We just wanted to make something great and share it with friends,” founder Adam Goldberg says in the NRN coverage. “The idea of hitting 300 stores is surreal, but the real achievement is building a company that still feels like that: small, connected, and full of energy.”
Meanwhile, the brand is at work on several company-owned stores in the South Florida market, including the one in Aventura. The “Publix plaza” in question is the Aventura Shopping Center, located at 2952-2984 NE 199th Street. It’s already home to restaurants like Pure Green and Abbalé Modern Mediterranean Kitchen.
