According to a recently submitted permit application, San Antonio’s New York diner-style restaurant concept Max & Louie’s is planning to expand to Cibolo.
Coming to 18124 I-35 — an address that is currently home to the movie theater Santikos Cibolo — the eatery will land near establishments such as Dutch Bros Coffee, Parry’s Pizzeria & Taphouse, and Willie’s Grill & Icehouse.
What Now San Antonio reached out to the restaurant’s founder and owner, Drew Glick, to learn more about his plans for the upcoming eatery; however, he could not provide additional information before publication
Nevertheless, the filing reveals that the finish-out of the 9,111 square-foot restaurant space is scheduled to begin on October 10 and to be completed on February 26, 2026. It also discloses that the San Antonio-based firm Sage Architecture, Inc. is managing the $2,750,000 project.
Founded in San Antonio in 2016, the concept was inspired by Glick’s grandfather and great uncle, both of whom were butchers who’d immigrated to the United States from Russia.
“Every dish we serve is an ode to Max and Louie’s dedication to quality and community. It’s a tribute to the butcher shops, deli counters, and kitchens where friendships were formed and memories made,” Max & Louie’s shares on its website.
On the breakfast menu are classic dishes like banana-pecan pancakes, bleeker street breakfast tacos, and challah French toast. For lunch, patrons can choose from traditional burgers such as the B.A.D. Burger and B.L.T. Burger to hearty dishes; think chicken parmesan and bone-in pork chops.
This will mark its second outpost, with its first situated at 226 W Bitters Road, Suite 126.
