Kopitos Cocina Owner Planning Permanent Location in McMinnville

A mobile spot for tacos and burritos is parking at a new location south of Newburg.

A Newburg restaurant with a mobile food cart will soon have a new location in the city southwest of Portland.

From Kopitos Cocina’s Facebook page, the company has a new “permanent home” in McMinnville. The address has not yet been announced, and an opening date is coming soon. When contacted, staff of Kopitos said work for the new space is underway.

“With more than 10 years in the restaurant industry, our talented chefs and hard-working team are here to bring fresh authentic food to your event,” says the description on their Facebook page.

The current Kopitos location is at 101 E 1st Street in Newburg, also south of Portland. There are lunch options like gorditas, empanadas, burritos and bowls, as well as their New York steak tacos. The location also serves beer and wine, and a new menu is being planned out.

The mobile food cart travels out to venues around Newburg, including Abbey Road Farm and Natalie’s Estate Winery. The menu is similar to the restaurant location, with variations based on the seasons. Now, the owners are getting ready to park the cart for good.

Owner Miriam Sangabriel has not yet responded to What Now Portland’s request for comment. On the Oregon Secretary of State page, there is no new address listed. In the post, it looks to be going in near the Mac Market at 1140 NE Alpine Avenue, but this has not been confirmed.
